Whisk the egg whites until firm. Slowly add the sugar and
contuinue to beat well. Gently fold in the egg yolks, vanilla
sugar and sifted flour. Grease a pan with some butter and
lightly sprinkle with flour. Pour the omlette mixture into
the pan and place in the oven to bake. Bake the omlette until
golden on top.
While the omlette is still hot, spread on the warm cranberries
and fold the omlette in half. Fill the edge of the omlette
with the whipped cream (add sugar as desired), and decorate
with cranberries. Sprinkle the omlette with the icing sugar
(and liquour if desired) and serve.
