PREPARATION:

Clean tripe carefully and if it is uncut, cut the tripe into thin strips. Cover it with boiling water, cook and strain. After that, cover it once again with boiling water and cook with onion until tender.

Cut vegetables into stripes and cook them in a separate pot.

When tripe are tender, add vegetables and make it with browned flour and butter. Boil, add salt and season with pepper, nutmeg and marjoram.

Tripe soup is served hot and with good bread.

Some people like spicy tripe with some Tabasco or cayenne pepper.
