ERWTENSOEP (PEA SOUP)
A real Dutch recipe is pea soup. Especially if it is cold and rough weather, it is delicious to eat a cup of soup. Here follows the recipe for this old-Dutch meal soup.

Do the split peas, the pig's trotter, a spoon salts and 2 litres water in a pan. Bring this to cook and let it simmer for 2 hours. Obtain the pig's trotter from the pan, flesh will fall of the pig's trotter now. Cut all the flesh in small bits. Stir the peas in the pan to purée. After that throw the flesh in the pan. Cut the celery into dice. Cut the potatoes in cubes. Cut the celery and the leek into little pieces. Joint all this to the soup. Joint the smoke sausage to the soup. Let the whole soup simmer for 3 quarters.
Serve the pea soup with rye bread and the smoked bacon.
