Cantucci Biscuits from Prato

Ingredients:

1kg flour
10 eggs
600g sugar
800g almonds
40g yeast
15g honey
vanillina



Instructions:
- set the oven at medium temperature
- roughly chop the almonds
- mix the flour, sugar, eggs, bicarbonate of soda and salt together in a large mixing bowl
- work the ingredients into a dough and knead until it is smooth
- divide the dough into 3 or 4 pieces and form each piece into a 2-inch thick roll
- lightly grease and flour a baking sheet
- arrange the rolls on the baking sheet, leaving some space between each
- bake for 30 – 40 minutes

- when the rolls are cool, cut each of them into 1- inch slices, keeping the knife at a 45° degree angle (the slices should be oval instead of round)
- put the biscuits back into a low-heated oven for another 10-20 minutes until dry and crunch

For the perfect end to your Christmas dinner, settle your guests down in front of the fire swith a plate of your home-made Cantucci biscotti, a glass of wine and give yourself enough time to take in the flavour and taste of this speciality.
