Pumpkin Pie
 

Basic Flaky Pie Crust
8 tablespoons  unsalted butter, cold
1 1/3 cups + 4 teaspoons pastry flour or 1 1/3 cups bleached all-purpose flour
1/4 teaspoon salt
1/8 teaspoon baking powder
2 1/2 to 3 1/2 tablespoons ice water
1 1/2 teaspoons cider vinegar

Pumpkin Filling
1 3/4 cups  unsweetened pumpkin puree

3/4 cup packed light brown sugar
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
2/3 cup milk
2/3 cup heavy cream
3 large eggs
1/2 teaspoon pure vanilla extract
